Greek Stifado Recipe

This Greek Stifado recipe is the favorite of my friend’s wife. Whenever I visit his house, she definitely serves this Greek Stifado . Really this dish is delicious. Ingredients

 
6 lbs. lean beef, stew meat cut into 1 1/2 inch cubes
 
Salt and freshly ground black pepper
 
1 c. butter
 
5 lbs. sm. onions, peeled
 
2 can tomato paste
 
1 c. red table wine
 
4 tbsp. red wine vinegar
 
2 tbsp. brown sugar
 
2 clove garlic, minced or mashed
 
2 bay leaf
 
2 sm. cinnamon stick
 
1 tsp. whole cloves
 
1 tsp. ground cumin
 
1 tbsp. currants or raisins, optional

Directions

step1-Season meat with salt and pepper. Melt butter in a Dutch oven or heavy kettle with cover.

Step2-Add meat and coat with butter but do not brown. Arrange onions over meat.

Step3-Mix tomato paste, wine, vinegar, sugar and garlic; pour over meat and onions.

Step4- Add bay leaf, cinnamon, cloves, cumin and currants. Cover onions with a plate (to hold them intact).

Step5-Cover kettle and simmer 180 minutes or until meat is very tender. (Do not stir).
