Greek Salad In Peppers Recipe
Ingredients
| Tomato | 1 Large, chopped | |
| Green onion | 1 , sliced | |
| Salt | 1/8 Teaspoon | |
| 1 teaspoon snipped fresh or 1/2 teaspoon dried basil leaves | ||
| Lemon juice | 1 Tablespoon | |
| Green peppers | 4 Small, cored | |
| Feta cheese | 1/2 Cup (16 tbs), crumbled | |
| 8 anchovies, drained and rinsed | ||
| Lemon wedges | 8 | |
Directions
Mix tomato, onion, salt, basil, and lemon juice; refrigerate covered 1 hour.
Spoon half the tomato mixture into green peppers; layer cheese over tomatoes.
Spoon remaining tomato mixture over cheese.
Arrange 2 anchovies over top of each pepper.
Serve with lemon wedges.
