Greek New Year's Bread Recipe

Ingredients
2 (13 3/4 -oz.) pkgs. hot roll mix
1 1/4 cups warm milk
2 eggs
1/4 cup honey
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 cup chopped almonds
2 Tb. honey
2 Tb. flaked almonds
Directions
Prepare 2 (13 3/4-oz.) pkgs. hot roll mix, using 1 1/4 cups warm milk in which 2 pkgs. active dry yeast from mix have been dissolved.
Beat in 2 eggs and 1/4 cup honey.
Stir in flour from hot roll mix, together with 1/2 teaspoon each cinnamon and nutmeg.
Stir very well.
Set to rise, covered, 30 minutes in a warm place.
Turn dough onto a floured board and knead well.
Knead in 1 cup chopped almonds.
Place in a round, 1-1 1/2-qt. oven-proof casserole and allow to rise again, until doubled in volume.
Bake 40-50 minutes at 375°, or until golden brown and sounds hollow when rapped.
Loosen from casserole and cool on wire rack.
While still warm, brush cake with 2 tablespoons honey and sprinkle with 2 tablespoons flaked almonds.
Cool completely.
