Greek Island Salad Recipe
This greek island salad is a wonderfully flavorful and fresh salad prepared with feta cheese and gherkins along with onions and tomatoes. Flavored with oregano, garlic and and seasoned with salt and pepper, the greek island salad may be served as a side.
Ingredients
| 3 oz. Fetta cheese, or white Stilton | ||
| Tomatoes | 3 Large, thinly sliced | |
| 1 onion, sliced in thin rings | ||
| Black olives | 6 8 | |
| Gherkin | 1 Medium, sliced | |
| Coriander seeds | 1 Teaspoon, finley crushed | |
| Garlic | 1 Clove (5gm), crushed | |
| Oregano | 1/2 Teaspoon | |
| Olive oil | 2 Tablespoon | |
| Salt | To Taste | |
| black pepper | 1 | |
Directions
Cut the cheese into fairly thin strips, about 1 1/2 inches in length.
Place the cheese in a salad bowl, add the tomatoes, onions, olives and gherkins and mix together.
In a small bowl combine the crushed coriander, crushed garlic and oregano with the olive oil, and pour over the salad.
Season with salt and freshly ground black pepper and serve with hot fresh bread.
