Greek Style Shrimp Recipe

Greek style shrimp is a skillet cooked and easy shrimp recipe. Prepared with onions and garlic with vegetable juice, the shrimp is finished with feta cheese and parsley for a wholesome flavor. Served with a dash of pepper, it is fresh and totally mediterranean.

Ingredients

 
2 tablespoons olive oil
 
1 cup sliced green onions
 
4 large cloves garlic, minced
 
1 pound large shrimp, shelled and deveined
 
3/4 cup Vegetable Juice or No Salt Added Vegetable Juice
 
1/3 cup crumbled feta cheese (2 ounces)
 
2 tablespoons chopped fresh parsley
 
Dash pepper
 
8 slices Fully Baked French-Style Bread

Directions

In 10-inch skillet over medium heat, in hot oil, cook onions and garlic until onions are tender.
Add shrimp; cook until shrimp are pink and opaque, stirring constantly.
Stir in juice.
Heat to boiling.
Reduce heat to low; simmer 2 minutes.
Sprinkle with cheese, parsley and pepper.
