Ingredients

 1 lb. small mushrooms
 1/2 cup olive oil or vegetable oil
 Dry white wine1/4 Cup (16 tbs)
 Lemon juice2 Tablespoon
 Water1/2 Cup (16 tbs)
 Garlic1 Clove (5gm), crushed
 Salt1 Teaspoon
 Pepper1/4 Teaspoon
 Sugar1 Teaspoon
 Fennel seeds1/4 Teaspoon
 Ground coriander1/2 Teaspoon

Directions

Wipe mushrooms with a damp cloth.
Set aside in a large heat-proof bowl.
In a small saucepan, combine remaining ingredients.
Bring to boil over medium heat; simmer about 2 minutes.
Immediately, pour over mushrooms.
Cover and cool to room temperature.
Refrigerate 6 hours or overnight.
