Greek Stifado Recipe

Ingredients
2-lb (1 kg) beef round, in 1-inch (2.5 cm) cubes
1/2 tsp (2 mL) pepper
1 tsp (5 mL) salt
1 tsp (5 mL) sugar
1 tsp (5 mL) cinnamon
1/3 cup (80 mL) vegetable oil
12 small white onions
2 cups (500 mL) beef broth
A 7 1/2-oz (2D mL) can tomato sauce
1/4 cup (60 mL) vegetable oil
1 medium-sized eggplant, peeled and diced
1 green pepper, cut in strips
1/2 cup (125 mL) long grain rice
Directions
€¢ Mix together in a plate the pepper, salt, sugar and cinnamon. Roll the beef cubes in the mixture.
€¢ Place the oil in a browning dish (Corning) and microwave 4 minutes at HIGH.
€¢ Add the meat cubes to the hot oil. Stir a few seconds and microwave at MEDIUM-HIGH 4 minutes. Stir and microwave another 4 minutes at MEDIUM-HIGH.
€¢ Remove meat to an 8-cup (2 L) microwave-safe dish.
€¢ Add the remaining fat (there is very little), microwave 1 minute at HIGH. Add the onions, microwave 2 minutes at HIGH.
€¢ Add 1/2 cup (125 mL) beef broth and tomato sauce. Mix well. Cover with casserole lid or plastic wrap. Microwave 1 hour at MEDIUM, stirring after 30 minutes.
€¢ Microwave the 1/4 cup (60 mL) oil 5 minutes at HIGH in the browning dish. Add the eggplant, stir well. Microwave 5 minutes at HIGH.
€¢ Add the green pepper. Microwave 1 minute at HIGH.
€¢ Add to the casserole at the end of its cooking period, together with the rice and the remaining beef broth. Stir well. Cover and microwave 20 to 25 minutes at MEDIUM-HIGH, stirring after 15 minutes of cooking.
