Greek Skewered Swordfish Recipe
|Swordfish||2 Pound, sliced 1 inch thick and cut in 1 inch cubes|
|Lemon juice||1⁄4 Cup (4 tbs)|

Mix the lemon juice, oil, salt, pepper, and parsley and stir the swordfish cubes well in the mixture.
Let them marinate at least 1 hour.
Drain the swordfish and string the cubes on skewers, with a small piece of bay leaf between each two cubes.
Brash the fish lightly with oil and broil about 8-10 minutes, or until it is golden brown.
Or broil it over charcoal on an outdoor grill.
Serve sprinkled with parsley and with lemon wedges.
Or make a dressing of 3 tablespoons each of oil and lemon juice, 1 tablespoon chopped parsley, and salt and pepper to taste, and drizzle this over the swordfish.
