Ingredients

 White potatoes- 8 large, boiled
 Parsley sprig8 , chopped
 Whole scallions- 4, sliced
 Green bell pepper1 To taste
 Olive oil1/4 Cup (16 tbs)
 Wine vinegar2 Tablespoon
 Garlic2 Clove (5gm), mashed
 Salt1 Teaspoon
 Romaine - 1 head, washed, torn into bite-sized pieces
 Watercress sprig12
 Unwaxed cucumber- 1, sliced
 Avocado1 , peeled
 Feta cheese1/4 pound, sliced
 Shrimp - 4 large per person, peeled, deveined and steamed 4 minutes
 3.5-oz can anchovy fillets-1
 Greek olives- 12
 Radish- 1 per person
 Scallion- 1 whole per person
 Ripe tomato- 1 per person, cut into wedges
 Olive oil- 1 tablespoon per person
 Wine vinegar- 1 tablespoon per person
 Dried oregano

Directions

MAKING
1. Drain all the boiled potatoes so that excess water is removed.
2. Slightly cool the potatoes so that they can be peeled and sliced.
3. Toss the warm potatoes with olive oil, vinegar, salt, parsley, scallions and green pepper.
4. Bed dinner plates with romaine.
5. Place spoonfuls in the center portion of every plate.
6. Arrange the sliced cucumber pieces, avocado slices, anchovy fillets, jumbo shrimp, feta cheese and sprigs of watercress on each place.

FINALIZING
7. Drizzle olive oil and wine vinegar on every plate.
8. Sprinkle oregano.

SERVING
9. Serve Greek Shrimp And Potato Salad A La Pappas immediately.
