Very large ripe tomatoes - 4
 
Scallions - 2 large or 4 medium sized
 
Cucumber - 1 , sliced
 
Black olives - 20
 
Feta cheese - 4 thick slices
 
Oregano
 
Extra virgin olive oil
 
Salt
 
Pepper

Directions

MAKING
1 Cut the tomatoes into eighths.
2 Cut the wedges across, in half.
3 In 4 deep individual plates, arrange equal number of tomato pieces.
4 Slice the scallions.
5 Arrange the scallions, cucumber, and the olives in the plates.
6 Place a slice of feta cheese in the center of each.
7 Sprinkle oregano over the salads.
8 Season, and drizzle some olive oil onto each serving.

SERVING
9 Serve at once.
