Greek salad is a mixed vegetable salad. Flavord with mint, the green salad has feta and cottage cheese in it. Dressed with olive oil and lemon juice, this greek salad is tossed to serve.

Ingredients

 
1/2 small head romaine lettuce
 
2 cups trimmed spinach leaves
 
2 tablespoons peeled, seeded, and chopped cucumber
 
3 tablespoons dry curd, low fat cottage cheese or farmer cheese
 
2 tablespoons minced fresh mint or 1 1/2 teaspoon mint flakes
 
1 tablespoon rinsed and crumbled feta cheese
 
2 medium size pitted ripe olives, chopped fine
 
1 teaspoon olive oil
 
1 teaspoon lemon juice
 
1 clove garlic, minced
 
1/8 teaspoon black pepper

Directions

Wash the romaine and spinach leaves, pat them dry with paper towels, and tear into bite size pieces.
Place in a large bowl with the cucumber, cottage cheese, mint, and feta cheese; set aside while preparing the dressing.
In a small bowl, mix the olives, olive oil, lemon juice, garlic, and pepper; whisk together until well blended.
Pour the dressing over the salad, toss well, and serve.
