This is one of my favorite salads to make. Its so easy, fresh, and delicious. Plus, you can make everything ahead of time and mix it together when you’re ready to eat!

Ingredients

For the dressing
 Garlic cloves2 , minced
 Dried oregano1 Teaspoon (fresh oregano - 2 teaspoon)
 Dijon mustard1⁄2 Teaspoon
 Red wine vinegar1⁄4 Cup (4 tbs)
 Olive oil1⁄2 Cup (8 tbs)
 Salt To Taste
 Pepper To Taste
For the salad
 Romaine lettuce head2 , chopped
 Cucumber1 Small, chopped (hothouse cucumber)
 Bell pepper1 Small, seeds removed and chopped
 Red onion1⁄2 , sliced thinly
 Feta cheese1⁄2 Cup (8 tbs), crumbled
 Kalamata olives1⁄2 Cup (8 tbs), pitted

Directions

MAKING
For the dressing
1. In a bowl, put together garlic, oregano, Dijon mustard, salt and pepper and whisk until mixed.
2. While whisking slowly add the olive oil until well combined.
For salad
3. In a serving bowl, place the lettuce, sprinkle bell pepper, cucumber, onion, feta cheese and olives.
4. When you are ready to eat, stream the dressing on top.

SERVING
5. Serve as desired.
