 Garlic1 Clove (5gm)
 Head of lettuce1 Medium, shredded
 3 Medium Tomatoes, Cut In Eighths
 Cucumber1 Medium, sliced
 Green onions6 , sliced
 Celery stalks3 , diced
 1 Medium Green Pepper Diced 6 Radishes, Sliced
 Carrot1 , shredded
 2 Tablespoons Chopped Fresh Parsley 1 Teaspoon Salt
 1/8 Teaspoon Pepper 1/4 Cup Olive Oil
 1 Tablespoon Vinegar Or Lemon Juice
 1 Beet, Canned Or Cooked, Sliced
 4 Ounces Feta Cheese, Crumbled 8 Ripe Olives
 1/4 . Cup Cooked Chick Peas

Directions

1. Rub large salad bowl with garlic.
2. Combine next eleven ingredients.
3. Toss lightly with olive oil. Sprinkle with vinegar. Toss again.
4. Garnish with border of sliced beet and feta cheese.
5. Arrange olives in center and sprinkle chick peas over all.
