Greek Rice And Spinach Bake Recipe
Ingredients
| Butter | 1 Tablespoon | |
| Frozen chopped spinach package | 1 , Defrosted | |
| Onion | 1 Small, finely chopped | |
| Eggs | 3 | |
| Milk | 3/4 Cup (16 tbs) | |
| Ground nutmeg | 1/4 Teaspoon | |
| 3 cups cooked white or brown rice | ||
| Feta cheese | 3/4 Cup (16 tbs), finley crumbled | |
| Dill | 2 Tablespoon, chopped | |
| 2 tbsp fine dry bread crumbs | ||
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
In a large nonstick skillet, heat butter over medium heat.
Add spinach and onion; cook, stirring, for 4 minutes or until tender.
Let cool slightly.
In a large bowl, beat eggs with milk and nutmeg; add rice, feta and dill.
Stir in spinach mixture; spread in baking dish.
In a small bowl, combine bread crumbs and Parmesan cheese; sprinkle over spinach mixture.
Bake for 35 to 40 minutes or until top is lightly browned and center is set.
Cut into squares and serve.
