Ingredients
Romaine OR Greens of Your Choice - 6 cups, chopped
Cucumbers - 2, small, halved, seeds removed, and diced
Red Onion - 1/2, diced
Feta - 1/2 cup crumbled
Garlic - 1 clove
Olive Oil - 3 tablespoons
Lemon Juice - 2 tablespoons
Hummus - 2 tablespoons
Salt - to taste
Pepper - to taste
Pita - as required, toasted
Directions
MAKING
1. In a large mixing bowl, whisk olive oil, lemon, garlic, salt and pepper with a fork.
2. Add the diced onion and half of the feta.
3. Let the flavors marry while you prepare the lettuce and cucumbers.
4. Toss the lettuce and cucumbers in the dressing.
SERVING
5. Divide the salad among four plates, top with remaining feta and serve with toasted pita.
