Greek Country Salad Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Ground black pepper | 1 To taste | |
| Garlic | 1 Clove (5gm), crushed | |
| 1 cos lettuce, well washed | ||
| Tomatoes | 3 , sliced | |
| 90 g/3 oz black olives | ||
| 120 g/4 oz feta cheese, diced | ||
| Pepper red | 1/2 To taste, sliced | |
| 6 peperonata | ||
| Fresh or dried oregano | ||
| Salt | To Taste | |
Directions
1. Whisk the oil, lemon juice, salt and pepper and garlic together until well emulsified. A blender or food processor may be used for this.
2. Stack up 5 or 6 lettuce leaves and shred them finely with a sharp knife.
3. Place the lettuce in the bottom of a serving dish and arrange the other ingredients on top. Spoon over the dressing and sprinkle on the oregano.
