Ingredients

 
1 chicken
 
1 quart chicken stock
 
1 teaspoon minced garlic
 
1 teaspoon oregano
 
1 teaspoon rosemary
 
1 teaspoon sweet basil salt to taste
 
1/2 teaspoon black pepper
 
Rice:
 
1/4 cup onions, minced
 
3 tablespoons oil
 
1 cup brown rice
 
2 3/4 cups strained stock
 
Garnish:
 
1/3 cup blanched almonds
 
3 tablespoons oil
 
2/3 cup raisins
 
1 green pepper, sliced in rings

Directions

Cut raw chicken into 8 pieces each leg into two, each breast into four, and wings, if desired.
Put chicken, stock, garlic, herbs, salt and pepper into pot and simmer until chicken is tender (about 1 hour).
Lift chicken out and set aside.
Strain stock.
Prepare rice:
Saute minced onions in oil until tender.
Add raw brown rice and stir.
Add strained stock, stir and cover tightly.
Simmer over medium heat until stock is absorbed and rice is tender (about 35-40 minutes).
Do not stir during cooking.
Toss chicken pieces and rice together gently and heap on serving platter.
Prepare garnish:
Saute almonds lightly in oil until golden; lift out with slotted spoon; then saute raisins in same pan with more oil, if necessary, until raisins are puffy.
Lift out with slotted spoon.
Scatter almonds and raisins over chicken and rice.
Top with thin slices of raw green pepper.
