Greek Bean And Feta Salad With Tahini Dressing Recipe
Ingredients
| Green beans | 1 Pound | |
| Sweet red pepper | 1 To taste, sliced | |
| 1 small onion, sliced in thin rings | ||
| Cherry tomatoes | 1/3 Pound | |
| Parsley | 2 Tablespoon, finely chopped | |
| Oregano | 1 Tablespoon, chopped | |
| Black greek olives | 1 Tablespoon, chopped | |
| Feta cheese | 2 Ounce, crumbled | |
| TAHINI DRESSING | ||
| Olive oil | 1/3 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| Sesame seed paste | 2 Teaspoon, crushed | |
| Garlic | 1 Clove (5gm), crushed | |
| Granulated Sugar | 1/2 Teaspoon | |
Directions
Wash beans and remove ends.
Place beans and red pepper in boiling salted water for 1 or 2 minutes.
Place under cold water.
Drain.
Arrange on flat serving dish.
Mix the dressing ingredients together and pour over warm vegetables.
Add sliced onion and cherry tomatoes.
Sprinkle with parsley and oregano, then garnish with olives and Feta cheese.
