Grecian Spinach Pie Recipe
Ingredients
| Spinach | 3 Pound, chopped | |
| Parsley | 1/2 Cup (16 tbs), chopped | |
| 1/2 c. chopped dill | ||
| Scallions | 1 Bunch (100gm), chopped | |
| Salt | To Taste | |
| Onions | 1 Pound, chopped | |
| Olive oil | 1/2 Cup (16 tbs) | |
| Feta cheese | 1/2 Pound | |
| Pepper | 1 | |
| 8 to 10 phylo | ||
Directions
Mix spinach, parsley, dill and scallions in large bowl; sprinkle with salt.
Drain; squeeze out moisture.
Brown onions in oil; stir into spinach mixture.
Stir in cheese; season to taste with salt and pepper.
Stack 4 to 5 phylo in shallow oiled baking pan; brush each sheet with oil.
Add spinach mixture.
Cover with remaining pastry sheets; brush with oil.
Cut steam vent.
Bake at 325 degrees for 40 minutes.
