Great Orange Wheat Cookies Recipe
Ingredients
1/3 cup frozen orange juice concentrate
1/2 cup natural wheat & barley cereal (Grape-Nuts)
1 tsp margarine
1 tsp vanilla extract
1 egg
2 tsp granulated sugar replacement
1 cup all-purpose flour
1 tsp baking powder
Directions
Combine frozen orange-juice concentrate and cereal in a medium-size microwavable bowl.
Cover with paper towels.
Microwave on High for 2 to 3 minutes.
Stir in margarine, re-cover, and allow to cool for 5 minutes.
Add vanilla, egg, and sugar replacement.
Beat with a fork to blend completely.
Stir in flour and baking powder thoroughly.
Spray cookie sheets lightly with a vegetable-oil spray.
Roll dough into small balls, and then into finger-shaped cookies.
Place onto the greased cookie sheet.
Bake at 375°F (190°C) for 15 to 17 minutes.
Remove from cookie sheet, and cool on racks.
