Great Greek Pasta Salad Recipe
Ingredients
| 8 oz penne or spiral pasta | ||
| Red onion | 1 Small, chopped | |
| Bell peppers | 2 To taste, diced | |
| Feta cheese | 3/4 Cup (16 tbs), crumbled | |
| Kalamata olives | 1/2 Cup (16 tbs) | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Olive oil | 2 Tablespoon (Dressing 3/4 cup Tzatziki Sauce) | |
| Red wine vinegar | 1 Tablespoon (Dressing 3/4 cup Tzatziki Sauce) | |
| Dried oregano | 1 Teaspoon (Dressing 3/4 cup Tzatziki Sauce) | |
| Pepper | 1/4 Teaspoon (Dressing 3/4 cup Tzatziki Sauce) | |
Directions
1. Cook pasta in a large pot of boiling salted water until tender but firm. Drain; rinse under cold water to chill. Drain well. In a serving bowl, combine pasta, onion, bell peppers, feta, olives and parsley.
2. Dressing: In a bowl combine Tzatziki Sauce, oil, vinegar, oregano and pepper; toss with pasta mixture to coat. Cover and refrigerate. Remove from fridge 30 minutes before serving.
