Ingredients

 Fish1 2 Pound, dressed
 Salt1/2 Teaspoon
 Bacon strip3 , minced
 4 dried mushrooms, soaked until soft and then sliced
 2 green onions, cut in 3/4-inch pieces
 3 thin slices of ginger cut in 1-inch lengths
 Cooking sherry1 Teaspoon
 Soy sauce1 Teaspoon

Directions

Make three crosswise slashes on each side of fish; rub both sides with salt.
Place fish on plate and cover with mushrooms, bacon, onion and ginger.
Pour on soy sauce and sherry; steam in steamer for about 20 minutes.
Save fish juice and put it in a saucepan-heat and thicken with cornstarch to make a sauce; pour over fish.
Decorate with parsley and serve hot.
Allow 1 fish per person.
