Chicken Gravy With Red Wine Recipe Video

Ingredients

2 tablespoons olive oil or vegetable oil
 
2 large shallots
 
2 teaspoons tomato paste
 
1/2 cup red wine
 
2 cups chicken stock
 
3 sprigs rosemary
 
3 teaspoons corn starch mixed with 3 teaspoons of water
 
Salt and pepper

Directions

1. Sauté the chicken bones in olive oil or vegetable oil for 10 minutes, then add shallots and keep cooking until the bones become lightly brown. Add tomato paste and stir for 5 minutes or more.


2. Deglaze the pan with red wine, cook for 5 to 8 minutes and add the chicken stock and rosemary. Cook slowly for 30 to 45 minutes. With a ladle, remove some of the fat floating on the top. Remove from the stove, let rest for 15 minutes and strain the sauce.


3. Put the sauce back on the stove in a smaller sauce pan, simmer for few minutes and add 2 teaspoons of corn starch (diluted with 2 teaspoons of cold water). Keep stirring for few minutes then add salt and pepper.

I'm making milk gravy and biscuits. The recipe calls for 1/2 cup of bacon grease. I don't really want to cook that much bacon. What can i substitute and still maintain flavor?
