 1 1/4 kg crisp pears
 Butter75 Gram
 125 g plum jam

 Breadcrumbs60 Gram
 Egg whites2
 Icing Sugar1/2 Tablespoon

Directions

Preheat the oven to 160°C (325°F).
Peel, core and quarter the pears.
In the work bowl using the slicing disc, slice the pears.
Saute them one layer at a time in 75 g (2 1/2 oz) of hot butter, until light brown on both sides.
Place them in a baking dish.
Melt the jam, add the rum and carefully fold into the pears.
In the work bowl, using the steel blade, cream the butter and 90 g (3 oz) of sugar.
Gradually beat in the egg yolks, the flour, the cinnamon and finally the breadcrumbs.
Beat the egg whites stiff, add the sugar.
In a mixing bowl fold the egg white into the breadcrumb mixture and spread it over the pears.
Place in oven and bake for 25 minutes or until the top has puffed up, sprinkle with some icing sugar and continue baking for another 25 minutes.
Allow to cool and refrigerate.
This dish is best eaten the next day.
