2 pounds Yukon gold or yellow Finnish potatoes, scrubbed clean and thinly sliced
 
1 large onion, thinly sliced
 
1 clove garlic, finely minced
 
3 tablespoons all-purpose flour
 
1/4 cup grated Jarlsberg Lite or other light Swiss cheese
 
Salt and freshly ground pepper to taste
 
1 1/3 cups defatted chicken or vegetable broth
 
3 tablespoons freshly grated Parmesan cheese

Directions

Preheat the oven to 37S°F.
Generously coat a 1 1/2 quart flat oval gratin, or similar-shaped baking dish, with olive oil nonstick cooking spray.
In a large bowl, toss the potatoes, onion, and garlic with the flour, cheese, and salt and pepper until well coated.
Layer the coated potatoes and onion slices in the prepared baking dish.
Lightly spray the potatoes with olive oil nonstick cooking spray, pour the chicken or vegetable broth over the potatoes, and bake for 1 1/4 hours.
Sprinkle the top evenlv with the Parmesan cheese, and continue to bake for an additional 15 to 20 minutes, or until the potatoes are tender and the top is golden brown.
