Ingredients

 Cod fillet- 350 g / 12 oz / 3/4 lb, skinned and cu into strips
 Prawns- 100-150 g / 4-6 oz / 1 cup, peeled
 Scallops6
 Lemon juice1
 Small onion1
 Butter- 50 g / 2 oz / 3 cup
 White wine- 100 ml / 4 fl oz / 1/2 cup
 Plain flour- 6 tablespoons / 40 g / 1 1/2 oz
 Milk- 450 ml / 2 cups / 3/4 pint, infused with 1 bay leaf, 1 blade mace and peppercorns
 Parmesan cheese- 25 g / 1 oz / 1/4 cup, grated
 Parsley sprigs- to garnish
 Salt To Taste
 Pepper To Taste

Directions

GETTING READY
1. Start by preheating the oven to 375°F

MAKING
2.On ovenproof dishes, mix the cod strips, prawns and scallops with the lemon juice and seasoning and divide between 6 deep scallop shells, then saute the onion in the butter then add the wine and boil ot.
3. Simmer till reduced by half, whisk in the flour and cook until smooth, also strain in the infused milk and boil and simmer for 2-3 minutes
4. Over the fish, sprinkle the seasoning and sprinkle with cheese
5. Bake at 375°F for 20-30 minutes until golden brown on top

SERVING
6. Garnish with parsley sprigs and serve with a sauce of your choice
