Grated Mango Chutney Recipe
Ingredients
| 3 1/2 kgs. raw mangoes, grated or cut into tiny pieces | ||
| 3 1/2 kgs. sugar | ||
| 250 gms. red seedless raisins | ||
| 50 gms. red Kashmiri chilli powder | ||
| 1 teacup vinegar | ||
| 2 tbsps. cinnamon, clove, black pepper powder | ||
| Garlic | 2 Tablespoon, chopped | |
| Cumin seeds | 2 Tablespoon, crushed | |
| Asafoetida | 5 Gram | |
| Salt | 2 Tablespoon | |
Directions
Place the grated mangoes, sugar, vinegar and garlic in a large, heavy dekchi over a slow fire. Allow the sugar to melt and keep stirring off and on for 20 minutes. Add the raisins, spices, salt, chilli and spice powders and asafoetida and stir vigorously till the syrup becomes sticky. Remove from the fire and cool. Store in clean bottles.
