Ingredients

 
Tender young carrots - 1 1/4 lb
 
For the dressing:
 
Natural yogurt - 1/2 cup
 
Garlic - 1 clove, minced
 
Olive oil - 1/2 cup
 
Parsley - 3 tbsp, finely chopped
 
Salt
 
Pepper

Directions

GETTING READY
1 Wash and peel the carrots.
2 Grate them finely.

MAKING
3 In a serving dish, put the grated carrots.
4 In a bowl, put the yoghurt and stir in the garlic along with a generous pinch of salt.
5 Gradually add in the olive oil, beating continuously with a small balloon whisk or hand held electric beater so that it forms an emulsion.
6 Stir in the parsley.

SERVING
7 Pour this dressing over the carrot.
8 Add a little more salt if desired, along with freshly ground pepper to taste.
