Ingredients

 1 1/2 pounds raw beets, well chilled
 White onion1 Small, finely chopped
 2 tablespoons Italian olive oil
 2 tablespoons mild wine vinegar
 Salt1/4 Teaspoon
 Ground pepper1/4 Teaspoon
 Sour cream1 Cup (16 tbs)
 1 to 2 tablespoons grated white horseradish
 8 ounces salmon caviar

Directions

Peel beets and cut julienne.
Mix with onion, olive oil, vinegar salt and freshly ground pepper.
Combine sour cream and horse radish and mix thoroughly .
When ready to serve, drain beets.
Mound in rectangular shape on small platter
Carefully spread sour cream down center.
Cover with salmon caviar
