Grated Beet and Caviar Salad Recipe
Ingredients
| 1 1/2 pounds raw beets, well chilled | ||
| White onion | 1 Small, finely chopped | |
| 2 tablespoons Italian olive oil | ||
| 2 tablespoons mild wine vinegar | ||
| Salt | 1/4 Teaspoon | |
| Ground pepper | 1/4 Teaspoon | |
| Sour cream | 1 Cup (16 tbs) | |
| 1 to 2 tablespoons grated white horseradish | ||
| 8 ounces salmon caviar | ||
Directions
Peel beets and cut julienne.
Mix with onion, olive oil, vinegar salt and freshly ground pepper.
Combine sour cream and horse radish and mix thoroughly .
When ready to serve, drain beets.
Mound in rectangular shape on small platter
Carefully spread sour cream down center.
Cover with salmon caviar
