1 lb flour
1 tsp. each cream of tartar and bicarbonate of soda
1/2 lb Barbadoes sugar
1/2 lb butter
1 tab. golden syrup
Dessertsp. ground ginger
Pinch of salt
Directions
Cream together butter and sugar, add syrup and dry ingredients.
It will be dry and crumbly, but don't add any liquid.
Put the gingerbread into a well greased tin to a depth of 1 1/2 inches.
Press lightly with the back of a spoon.
Cook in a very slow oven for at least 1 hour.
It should not need more than 1 1/2 hours.
The gingerbread will be crumbly on top but firm below.
Remember to cut it into pieces before it gets cold.
