Refreshing Grapefruit Sorbet Recipe
Ingredients
2 grapefruit
450 ml (3/4 pint) water artificial sweetener, to taste
3 tablespoons plain unsweetened yogurt
2 egg whites
peeled grapefruit segments to decorate
Directions
1. Thinly pare the rind from the grapefruit; cut the fruit in half and squeeze out the juice.
2. Put the pared grapefruit rind and the water into a pan; simmer gently for 8-10 minutes. Strain into a bowl and add the grapefruit juice and sweetener to taste.
3. Pour the grapefruit liquid into a shallow container and freeze until 'slushy' around the edges. Turn into a bowl and beat to break up the ice crystals.
4. Mix in the yogurt. Whisk the egg whites until stiff but not dry and fold into the grapefruit and yogurt mixture. Return to the freezer until firm.
5. Scoop the sorbet into stemmed glasses and decorate with peeled grapefruit segments.
