Grapefruit Aspic Recipe

Ingredients
| Unflavored gelatin - 2 env. | ||
| Sugar | 3/4 Cup (16 tbs) | |
| Pink grapefruit - 3 Ige. | ||
| Lemon juice | 3 Tablespoon | |
| Avocado | 1 | |
| Celery | 3/4 Cup (16 tbs), chopped | |
| Slivered almonds | 1/2 Cup (16 tbs) | |
Directions
MAKING
1) Add the gelatin in 1 cup cold water and allow to soften.
2) Dissolve in 1 cup boiling water.
3) Add in the sugar and stir till dissolved.
4) Section the grapefruit, reserving the juice.
5) To the gelatin mix, mix in the reserved juice and lemon juice.
6) Refrigerate till partially set.
7) Peel the avocado and slice thinly.
8) Fold in the celery, grapefruit sections, almonds, and avocado into the thickened gelatin.
9) Add into the mold.
10) Refrigerate overnight.
SERVING
11) Unmold on a bed of lettuce.
12) Top with mayonnaise.
