 Unflavored gelatin1 1/2 Teaspoon
 Cold water2 Tablespoon
 Neufchatel cheese package1/2 , softened
 Powdered sugar1/4 Cup (16 tbs), sifted
 3/4 cup unsweetened grapefruit juice
 Vanilla extract1/8 Teaspoon
 Tart Shells
 1 small pink grapefruit, peeled and sectioned
 Grapefruit Glaze
 Mint leaves4

Directions

Sprinkle gelatin over cold water in a small saucepan, let stand 1 minute.
Cook over low heat, stirring constantly, until gelatin dissolves.
Set aside.
Combine Neufchatel cheese, sugar, juice, and vanilla in container of an electric blender; top with cover, and process until smooth.
Add gelatin mixture, and process 5 seconds.
Chill slightly.
Spoon cheese mixture evenly into Tart Shells.
Top each with grapefruit sections.
Drizzle glaze evenly over grapefruit.
Chill Thoroughly before serving.
Garnish with mint leaves, if desired.
