Grapefruit Tarts Recipe
Ingredients
| Unflavored gelatin | 1 1/2 Teaspoon | |
| Cold water | 2 Tablespoon | |
| Neufchatel cheese package | 1/2 , softened | |
| Powdered sugar | 1/4 Cup (16 tbs), sifted | |
| 3/4 cup unsweetened grapefruit juice | ||
| Vanilla extract | 1/8 Teaspoon | |
| Tart Shells | ||
| 1 small pink grapefruit, peeled and sectioned | ||
| Grapefruit Glaze | ||
| Mint leaves | 4 | |
Directions
Sprinkle gelatin over cold water in a small saucepan, let stand 1 minute.
Cook over low heat, stirring constantly, until gelatin dissolves.
Set aside.
Combine Neufchatel cheese, sugar, juice, and vanilla in container of an electric blender; top with cover, and process until smooth.
Add gelatin mixture, and process 5 seconds.
Chill slightly.
Spoon cheese mixture evenly into Tart Shells.
Top each with grapefruit sections.
Drizzle glaze evenly over grapefruit.
Chill Thoroughly before serving.
Garnish with mint leaves, if desired.
