With a sharp-toothed curved grapefruit knife, cut around the edge, until you feel the fruit is separate from the skin.
Now cut in quarters so that you can remove them without spoiling the grapefruit shell.
Put the shells into a plastic bag.
Remove the membranes from the sections of grapefruit, saving as much of the juice as possible.
Put in a bowl.
Pour over the honey.
Cover and put the bowl and the bag of shells in the refrigerator to chill.
To serve, hull and wash strawberries, mix with the grapefruit sections and fill the shells.
