Grape Nuts Pudding Recipe

Ingredients
2 cup skim milk
1/2 cup egg substitute
4 pkts. concentrated acesulfame-K
Pinch salt (optional)
1 tsp vanilla extract
1 tsp almond extract
1/2 tsp cinnamon
1/4 cup Grape-Nuts cereal
1/4 cup golden raisins
Directions
Heat the milk over hot water in the top of a double boiler.
In a bowl, whisk together the egg substitute, acesulfame-K, salt, extracts, and spices.
Pour the hot milk slowly over the egg mixture, stirring constantly with a wire whisk.
Stir in the Grape-Nuts and raisins.
Pour the mixture into eight ovenproof custard cups that have been coated with non-stick vegetable cooking spray.
Place these in a large pan.
Pour hot water into the pan to the top of the outside of the custard cups.
Place this pan in a preheated 350°F (180°C) oven and bake about an hour.
