Ingredients
1 1/4 pounds Ribier grapes, seeded
1/3 to 1/2 cup sugar (depending on sweetness of grapes)
1 tablespoon fresh lemon juice
8 large grape leaves or other large fresh leaves, washed and dried
8 Leaf Cookies
Directions
Set dessert plates in freezer.
Puree grapes with sugar and lemon juice in processor or blender.
Strain through fine sieve into small bowl.
Let stand at room temperature until sugar is dissolved, about 30 minutes.
If ice cream maker is available, turn into machine and freeze according to manufacturer's instructions.
Transfer to freezer for 2 hours.
If ice cream machine is not available, pour strained puree into shallow pan and freeze until firm, about 4 hours, stirring with fork every 30 minutes at first and more frequently toward end of freezing time.
Transfer to processor or blender and mix well.
Refreeze until ready to form balls.
Arrange 2 leaves on each chilled plate.
Working quickly with small ice cream scoop or melon bailer, form "cluster" of grape sorbet balls in center of dishes.
