 Bulgur wheat1 Cup (16 tbs)
 3 cups grapes, rinsed, cut in half, and seeded if desired
 Red onion2/3 Cup (16 tbs), chopped
 Orange peel2 Teaspoon, finely shredded
 Orange juice1 Cup (16 tbs)
 1/3 cup chopped fresh mint leaves
 Lemon juice3 Tablespoon
 Ground coriander1 Teaspoon
 Romaine lettuce leaves, rinsed and crisped
 Salt To Taste
 Pepper To Taste

Directions

1. In a large bowl, combine bulgur and 2 cups boiling water. Let stand until bulgur is tender to bite, about 30 minutes. Pour into a fine strainer to drain.
2. Return bulgur to bowl. Add grapes, onion, orange peel, orange juice, mint, lemon juice, and coriander. Mix, and season to taste with salt and pepper.
3. Line a platter or wide bowl with romaine leaves. Mound salad on leaves.
