Oat Granola Recipe
Ingredients
| 2 1/2 cups regular rolled oats | ||
| Coconut | 1/2 Cup (16 tbs) | |
| 1/2 cup peanuts, coarsely chopped | ||
| Sunflower seeds | 1/3 Cup (16 tbs) | |
| Wheat germ | 1/3 Cup (16 tbs), toasted | |
| 3/4 cup honey or molasses | ||
| Vegetable oil | 1/4 Cup (16 tbs) | |
| 3/4 cup mixed dried fruit bits | ||
| Pitted dates | 1/2 Cup (16 tbs), chopped | |
| 1/2 cup miniature chocolate chips | ||
Directions
In large mixing bowl, combine rolled oats, coconut, peanuts, sunflower seeds and wheat germ.
Set aside.
In small mixing bowl, combine honey and vegetable oil.
Pour over oat mixture, stirring well to coat evenly.
Microwave at HIGH (10) 8 to 10 minutes, until mixture is toasted, stirring every 2 minutes.
Add dried fruit bits, dates and chocolate chips.
Set aside.
Line 3 quart oblong glass baking dish with foil.
Press the granola mixture into the foil-lined dish.
Allow to cool and break into clumps.
Store in an air tight container.
