Ingredients
1 1/2 cups mashed cooked potatoes
1 3/4 cups sugar
1 teaspoon ginger
3/4 cup milk
2 eggs, beaten
1 teaspoon nutmeg
3 tablespoons melted lard
4 teaspoons baking powder
6 to 8 cups flour
Apple Filling
Directions
Stir together the warm mashed potatoes, sugar, ginger, milk, eggs and nutmeg in a large bowl.
Stir in the lard, baking powder and enough flour to make a dough the consistency of pastry dough.
Break off a piece of dough the size of a walnut.
Roll to 1/8 inch thickness on a floured surface.
Spread a spoonful of Apple Filling over half the dough.
Fold the dough and seal and flute the edges to enclose the filling.
Pan-fry in additional lard for about 5 minutes or until brown on both sides, turning once.
