Ingredients for 2 balls pasta frolla (the pie crust)
 
One ball for the top and one for the lattice top
 
2 cups all purpose flour
 
½ cup sugar
 
¾ teaspoon baking powder
 
½ teaspoon salt
 
8 tablespoons sweet butter equals 1 stick.
 
2 eggs
 
Ingredients for filling
 
1 cup grana cotto (cooked grain)
 
1 ½ pounds fresh ricotta cheese
 
4 eggs
 
1 cup sugar
 
1 teaspoon vanilla extract
 
½ cup citron
 
½ teaspoon grated lemon peel
 
Grated peel of 1 orange
 
1 pinch cinnamon oil or ½ teaspoon ground cinnamon.
 
Additional cinnamon for sprinkling on top of the pie

Directions

Method for dough
Place 2 cups flour in a medium bowl then add the sugar ,baking powder and salt,
mix together then cut in the butter with a pastry blender.
The mixture should look like small peas.
With a fork, stir in the 2 eggs and form the dough into 2 balls then chill.

Method for filling
In a large bowl add the grain, ricotta and eggs and mix well.
Mix in the sugar , vanilla, salt, lemon and orange peel, and cinnamon.
Set aside for about 30 minutes.

Assemble the pie
Roll out the bottom dough and fit into the pie plate.
Pour the filling to the top.
Roll out the other dough ball and cut into ½ inch strips to form the lattice top.
Sprinkle with cinnamon and brush with a egg wash.
Place in a preheated 350 degree oven bake for just about an hour.
The middle should be slightly set.
Dust with powdered sugar and serve.
