Easy Grand Marnier Souffle Recipe

Ingredients

 
3 tablespoons butter
 
4 tablespoons flour
 
1 cup milk Pinch of salt
 
6 tablespoons sugar
 
2 tablespoons honey (orange blossom or other wild-flower honey)
 
2 tablespoons lemon juice
 
Rind of 1 lemon, grated
 
Rind of 1 orange, grated
 
4 egg yolks
 
1/3 cup Grand Marnier
 
6 egg whites

Directions

Melt butter in enameled saucepan.
Sprinkle in flour; mix, and cook without stirring 2-3 minutes.
Do not brown.
Add milk; stir with whisk until thick.
Add salt, sugar, honey, juice and rinds.
Remove from heat; add egg yolks, 1 at a time, whisking in thoroughly.
Let cool a bit; add Grand Marnier.
Whip egg whites until in soft peaks and still moist.
Fold mixture into whites with spatula.
Pour into buttered and sugared 6-cup souffle dish.
Place in upper third of preheated 400° oven.
Turn heat to 375° immediately; cook 20-25 minutes.
