Ingredients

 
3/4 cup milk
 
1/3 cup sugar
 
Peel of 1 orange
 
3 tbsp butter
 
1/3 cup flour
 
4 eggs, separated
 
1 oz Grand Marnier
 
2 tbsp orange juice
 
Icing sugar

Directions

Preheat oven to 375 °F (190 °C).
Butter and sugar 4 ramekins.
In a saucepan, bring to a boil milk, sugar and orange peel.
Set aside.
In a second saucepan, melt butter.
With a whisk, blend in flour until mixture turns to a roux.
Whisk boiling milk into flour mixture.
Bring to a boil.
Cook 1-2 minutes until thickened.
Remove from heat.
Let cool 2-3 minutes.
Add egg yolks, Grand Marnier and orange juice.
Set aside.
In a bowl, beat egg whites until peaks form.
With a spatula, fold into first mixture.
Fill ramekins, up to 1/2 inch (1.25 cm) from top.
Bake 15-20 minutes.
Approximately 5 minutes before the end of cooking, dust souffle with icing sugar.
