 1/2 cup evaporated milk or 1/4 cup nonfat dry milk powder plus
 Water1/2 Cup (16 tbs)
 2 tablespoons lemon juice or vinegar
 Brown sugar1 Cup (16 tbs)
 Honey1/2 Cup (16 tbs)
 Vegetable oil1 Cup (16 tbs)
 Vanilla2 Teaspoon
 2 eggs, beaten lightly
 Salt1 Teaspoon
 Baking soda1 Teaspoon
 Whole wheat flour6 Cup (16 tbs)

Directions

Mix together milk and lemon juice or vinegar; let stand. Beat well in a large bowl the brown sugar, honey, oil, vanilla, and eggs. Sift or stir salt and soda into part of flour. Add sifted flour mixture and milk mixture to bowl and mix well. Add additional flour as needed to make stiff dough. Divide dough in 4 equal parts and place each on a greased and floured cookie sheet. Roll each to about 1/8-inch thickness. Prick every 1 or 2 inches with fork tines. Bake 15 minutes, or until light brown. Cut in squares immediately.
