Graham Cracker Butterscotch Pie Recipe

Ingredients
2 cups milk, divided
1 cup dark brown sugar, firmly packed
2 egg yolks
3 tablespoons cornstarch
3 tablespoons butter or margarine
1 9-inch graham cracker pie crust
1/2 cup whipped cream
Directions
Heat 1/2 cup of the milk and the brown sugar in the top part of a double boiler until sugar is dissolved.
Beat egg yolks well, add cornstarch and remaining lVz cups of milk.
Add mixture to milk and sugar in top of double boiler.
Cook over hot water until mixture is thickened, then cook 5 minutes longer, stirring constantly.
Remove from heat and stir in butter.
Pour into graham cracker lined pie plate and chill in refrigerator.
Serve topped with whipped cream.
