Graham Streusel Coffee Cake Recipe

Ingredients
1/2. cup butter or margarine, melted
1 cup graham cracker crumbs
1/2 cup packed brown sugar
1/3 cup chopped nuts
3/4 teaspoon cinnamon
1 package (18 1/4 oz.) yellow cake mix
4 eggs
1 cup water
1/3 cup oil
Vanilla Glaze:
2 cups confectioners sugar
2 to 3 tablespoons water
1 teaspoon vanilla
Directions
In medium bowl, combine butter, crumbs, sugar, nuts and cinnamon.
Divide crumb mixture into two 8 or 9-inch round dishes, bottoms lined with wax paper.
Spread to cover bottom of dishes.
In large bowl, with electric mixer, blend cake mix, eggs, water and oil at low speed 1/2 minute; beat at medium speed 3 minutes.
Pour 2 cups batter into each dish.
TO COOK BY INSTA-MATIC: Cover completely with plastic wrap.
Cook on COOK 7.
TO COOK BY TIME: Cook at LOW 6 minutes and at MEDIUM-HIGH 2 to 3 minutes, or until toothpick inserted near center comes out clean.
TO COMPLETE: Let stand, uncovered, 10 minutes.
Repeat procedure with remaining cake.

In bowl, combine sugar, water and vanilla; stir until smooth.
With knife, loosen cake from sides of dish.
Invert one cake onto serving platter; carefully peel off wax paper.
Invert second layer onto paper plate; carefully peel off wax paper.
Cover until cool; just before serving spread half of glaze on cake on serving platter; top with second layer.
Drizzle with remaining glaze.
