Gourmet Duck (Wild Duck) Recipe
Gourmet Duck (Wild Duck) is an irresistible side dish that you simply can't resist. Try this duck dish; I am sure you will have a huge fan following for this one!
Ingredients
1 Duck Breast
1 Small Can Pearl Onions or 1 Medium
Onion, diced
1/2 Lb. Fresh Mushrooms or 1 Medium Can Mushrooms
2 Cubes Butter
Salt, Pepper & Garlic Salt
Dash Cinnamon
1 Tbs. Sugar or less
1 Tbs. Lea & Perrin Sauce
1 Cup Red Wine or Cream Sherry
Cooking Oil (to brown duck slices)
Directions
Bone out the breast of the duck with a sharp knife, remove all fatty tissue. (Don't cook the whole breast or it will roll up).
Slice in thin slices; pat dry Sprinkle slices with garlic salt, salt and pepper; dust with flour.
Sear onion in butter; add mushrooms, until golden brown.
Brown duck in oil at high heat, five minutes on each side of slice.
Add duck slices to onion and mushrooms.
Add dash cinnamon, sugar, Lea & Perrin sauce and wine.
Cover and simmer 15 minutes.
Serve with rice, green beans and orange and avocado salad, or one of your own choice.
