| Lamb Loin Chops - 6, cut into 1inch thickness | ||
| Lamb Kidneys - 3 | ||
| Mushrooms | 6 | |
| Sweet Red Peppers - 6 | ||
| Salt | To Taste | |

Directions
MAKING
1) Using a sharp knife, trim off the fat from the chops
2) Cut the kidneys across and cut off the tubes and white membranes
3) Into a broiler, place the chops and kidneys onto the rack
4) Season with salt and pepper
5) Broil till the chops and kidneys are cooked through
6) With a sharp knife, cut off the stems of the mushrooms
7) Mark the center of each of the mushrooms and make a deep edge of 1/8 inch deep around
8) Into a small frying pan, cook the mushroom in hot water till the cuts open up
9) Onto skewers thread a pickled red pepper, mushroom, half a kidney and repeat till the kidneys, mushrooms and peppers are threaded
SERVING
10) Into the chops, stick the skewers and serve onto a platter
