Ingredients

 3 16-ounce cans gooseberries
 Sugar5 Cup (16 tbs)
 Orange peel1 Teaspoon, shredded
 Ground ginger1 Teaspoon
 Fruit1/2 Ounce

Directions

Drain berries; reserve syrup.
Crush fruit; measure.
Add enough reserved syrup to make 5 1/2 cups.
In 8- to 10-quart kettle mix fruit, sugar, peel, and ginger.
Bring to full rolling boil.
Boil hard, uncovered, 1 minute; stir constantly.
Stir in pectin.
Remove from heat.
Skim off foam.
Pour into hot, sterilized half-pint jars or glasses.
