Ingredients

 1/4 pt. double or whipping cream
 1/4 pt. thick custard
 3/4 pt. frozen sweetened gooseberry puree, thawed
 Edible green colouring
 Grated chocolate for decoration

Directions

MAKING
1. In a bowl, whisk the cream until it becomes tiff and hold shape
2. In another bowl, fold in the custard and the cream into the gooseberry puree
3. Add a drop or two of the food colouring and give it a pale green shade; chill for some time

SERVING
4. Divide this fool evenluy between four stemmed glasses and sprinkle grated chocolate over it
