 1 kg. / 2 lb. gooseberries, topped and tailed
 Onions3 , chopped
 350 g. / 12 oz. raisins
 2.5 ml. / 1/2 teaspoon red pepper flakes
 Salt1 Pinch
 1 1/4 L / 2 pints vinegar
 225 g. / 8 oz. brown sugar
 30 ml. / 2 tablespoons ground ginger
 1.25 ml. / 1/4 teaspoon mustard seeds

Directions

Put all the ingredients into a saucepan and bring to the boil.
Simmer for 1 hour, or until the mixture is thick.
Pour into hot, sterilized jars and seal.
